Here is another quick and easy recipe to make during the COVID-19 lockdown. Whether you’re new to cooking or have advanced kitchen skills, this simple version of Spaghetti Bolognese can easily be made by anyone and it is perfect for the whole family.

Ingredients:
2 medium onions, peeled and chopped
1 tablespoon olive oil
1 garlic clove, peeled and crushed
500g lean minced beef
90g mushrooms, sliced
1 teaspoon dried oregano or mixed herbs
400g can tomatoes or chopped tomatoes
300ml hot beef stock
1 tablespoon tomato purée
salt and ground black pepper
350g Spaghetti
Freshly grated Parmesan
Method
Step 1: Put the onion and oil in a large pan and fry over high heat for 3-4 mins. Add the garlic & mince then fry until they are both brown. Add the mushrooms and herbs, continue to cook for another couple of mins.
Step 2: Stir in the tomatoes, beef stock, tomato purée and seasoning. Bring to the boil, then reduce the heat, cover and simmer, stirring occasionally, for 30 mins.
Step 3: Meanwhile, cook the spaghetti in a large pan of boiling, salted water, according to packet instructions. Drain well, run hot water through it, put it back in the pan and add a sprinkle of olive oil.
Step 4: Serve Spaghetti and mince in warm bowls, grate Parmesan cheese, for sprinkling on top. ENJOY
