Chef Chad Bosman Brings New Culinary Flair To InterContinental In Sandton

If any of you have ever been to InterContinental Johannesburg Sandton Towers, then you would know that it tends to have a very business-centric guest appeal, which tends to make foodies/travellers like myself pass it by not knowing that it now has a menu featuring a range of international styles and flavours to impress the most discerning and well-travelled palate. This past Thursday InterContinental invited myself and a few other influencers to an exclusive Chef’s Experience where we got to try out some exciting dishes created by Chef Chad Bosman.

With Chef Chad Bosman as the Executive Sous Chef he promises to bring a world-class food service that will encourage patronage of the IC JHB Sandton Towers offering throughout the day and into the evening. The new menu includes a range of exotic salad starters, soups, pastas, main dishes – Sriracha sous vide chicken, braised lamb shank, pork belly, grilled salmon, pan seared sole, and fish and chips – and premium steaks – fillet, rib-eye, and rump – served with rosemary polenta croquettes and onion puree; as well as sandwiches, wraps and pregos, burgers, sides, desserts, and a cheese platter.

For our exclusive Chef’s Experience we were treated to an array of delicious dishes including:

Exquisite canapés: Peppered mackerel, pineapple and coriander; Avocado sponge and chives; Caprese, basil and balsamic; and ostrich carpaccio, mushroom and brûléed orange.

Cured Salmon Carpaccio: Peas, avocado, herb brioche, chive oil.

Textures of Carrot:  an intermediate course created by Chef Chad Bosman, consisted of cumin goats cheese, pistachio, carrot crumble and citrus. Who knew carrot could have so many textures and taste so damn good! 

Springbok Loin: with smoked eggplant purée, mushroom jelly and sweet potato.

An Apple A Day: Apple mousse, textures of Apple & coconut snow.

All meals were paired with delicious, crispy wines from Jordan & Nederburg as well as some wonderful welcome bubbly from Krone.

I think it’s safe to say that Chef Chad Bosman will be taking IC JHB Sandton Towers to new heights. He has the skills and definitely has the passion required.
