Prep: 30 mins // Cook: 1.5 hours // Total: 2 hours // Servings: 6
Ingredients
1 big red onion
3 cloves garlic
3 red peppers
4 baby marrows
2 fresh tomatoes (large)
500g baby potatoes
Parsley
Thyme
1 red chilli
500g stewing lamb
1 can whole peeled tomatoes
3 spoons Tomato paste
750 ml vegetable stock
250 ml beef stock
100 ml red wine
Method
Step1: Chop onions and garlic and sauté in olive oil
Step 2: Add meat and fry until nicely browned
Step 3: Add the fresh tomatoes (cut in small pieces), cook until tomatoes start to break down
Step 4: Add thyme and parsley and chilli, stir well
Step 5: Add veg and beef stock, add canned tomatoes and tomato paste + red wine
Step 6: Add red pepper, baby marrow and pealed baby potatoes
Step 7: Let it simmer for 1,5 hours
Step 8: Stir occasionally
Step 9: Season with salt an pepper to taste
Step 10 To thicken stew cook with lid off and let liquid reduce to preference
