Meat-Free Rainbow Sandwich Recipe

Join me in choosing to go meat-free every Monday this January as part of a healthy new year’s resolution! When you eat less meat and dairy, you reduce your risk of developing heart disease, raised blood sugar levels, diabetes and even cancer. This is because a plant-based diet has major health benefits as it contains zero cholesterol, is alkaline free, and lower in saturated fat.

Trust me your body will thank you, even if it’s just one day a week. Every Monday in January I will be sharing some simple meat free recipes as well as tips and tricks to maintaining  a plant based lifestyle.  #MeatFreeMonday‘s are about to be deliciously epic. Todays simple vegan recipe is perfect for school lunch boxes or for those who are always on the go. Let the health transformation begin!Prep Time – 5 minutes, Cooking time – 12 minutes. Serves – 2 

Ingredients:

Fry’s Chicken-Style Burgers
1 tsp. lemon juice
Salt and ground black pepper
4 thick slices multigrain or rye bread (I prefer mine without bread)
1 lettuce leaf, shredded
1 small carrot, peeled and grated
¼ finely sliced red & green pepper
1 slice of pineappleMethod:

Prepare Fry’s burger using on pack instructions and set aside.

Top 2 slices of bread with Fry’s burger, lettuce, pineapple, carrot, red & green peppers and top with a sprinkle of lemon juice, season with salt and pepper. Top with remaining bread.
